Beet Salad
INGREDIENTS
4 Beets
1/2 bunch of chopped parsley
1 chopped bunch of scallion
1 fresh lemon squeezed
3 tbsp extra virgin olive oil
Sea salt to taste

DIRECTIONS
Boil the beets in water with the skin on for about 1 hour then cool the beets for an hour. Peel and dice the beets and chop the parsley, and the scallions. Then add the lemon juice and the olive oil together and mix it with the other ingredients in a bowl. Once finished add tahini sauce.
